What You Are Getting
This is not fast food with a Brazilian label on it.
The Espeto Grill is a licensed Microenterprise Home Kitchen operation in Lehi, Utah. Every Saturday we fire up a custom nine-zone churrasqueira over hardwood charcoal and cook the same cuts that have defined Brazilian churrasco for generations: picanha, fraldinha, linguiça, and grilled pineapple. The sides are made the same way: white rice, Brazilian black beans, farofa, and vinaigrette.
The food is packaged hot and delivered to your door. You open the bag and you have a Brazilian meal ready to eat.

Why We Cook This Way
Brazilian churrasco is defined by the espeto, the long flat-bladed metal skewer, and the fire beneath it. The technique matters as much as the ingredients.
We cook on a nine-zone churrasqueira over hardwood charcoal. As the fat renders from the meat and drips onto the coals it vaporizes and returns as smoke, continuously flavoring the meat throughout the cook. We manage the fire in zones, moving the skewers between high heat for searing and lower heat for finishing. The meat is salted simply with coarse salt because the technique and the fire do most of the work.
The people who try it for the first time tend to go quiet for a moment before they say anything. That reaction is the point.
